Lucas’ Chickpea curry

Well, it isn’t a real curry, but nice enough (even if I do say so myself 🙂

  • 1kg tomatoes
  • 2 medium onions
  • 1/2 packet cumin (whole seeds – about 12-13g)
  • 1/2 teaspoon cardamom seeds
  • 1/2 teaspoon peppercorns
  • 1/2 teaspoon rock salt
  • chili flakes
  • chicken stock.
  • olive oil

Method

  • Put tomatoes in hot water until the skin splits.
  • Peel tomatoes, chop and set aside.
  • Chop onions, set aside.
  • Grind cumin, cardamom, pepper and rock salt together.
  • Bring a pot to a medium heat.
  • Saute onions with spice mixture.
  • Once onions start being translucent, put tomatoes and chickpeas and enough stock to cover.
  • Bring to boil.
  • Add chili flakes to taste.
  • Simmer for an hour.
  • Season to taste, adjusting chili as required.
  • Serve with rice.

Diet? What diet?

I’ve been weak. I’m no longer doing The Soup Diet. 😐 There is only so much soup one can eat in a week (or three days as it turned out!). I need a lot more protine (read: meat). The first four days has no protine.

On the flip side, I’m now eating a lot more fruit and vegies, so it wasn’t a complete waste of time.

The Soup Diet

Last thursday when I weighed myself I was 86kg, so I’ve decided to start on the Soup Diet (from the Sacred Heart Memorial Hospital Cardiac unit). Unfortunately it is a no bread, no alcohol, no softdrinks nor fried food (or oil) type diet. The good news, it is only for seven days (although you can repeat it ad infiniteum).

I’ll update you on what each day entails, and If I lose any weight.

The soup is as follows:

  • 3 Tomatoes
  • 2 large cans crushed tomatoes
  • 1-2 large cans Campbells Beef Consomme’ plus two cups of water
  • 1 bunch spring onions
  • 1 bunch celery
  • 2 cans green, french beans
  • 2 green peppers
  • 1kg carrots
  • 2 chicken stock cubes
  • 1 Oxo cube
  • Chop all vegies into small pieces, combine all ingredients, add salt and pepper and stir well. Boil rapidly for 10 minutes, then simmer until vegies are tender. Add water if necessary, or to make a thinner soup.

This soup can be eaten anytime you are hungry. Eat as much as you want whenever you want. The more you eat, the more you will lose. Fill a thermos if you are going out during the day.

For drinks – unsweetened juices, tea, coffee and water. Drink plenty of water.
